New Meal Monday: Healthy Quesadillas with Salsa and Guac

It’s time to resurrect New Meal Monday! Last year we went through a spell of trying to go through our cookbooks to cook a new meal every Monday. There’s no reason we can’t continue this tradition, just because we only have a 2-burner stove are sans oven. If anything, it should be more fun because we’ll have to put on our creative thinking caps!

On Monday, we’d been bouldering all day, and were tired and hungry and craving something to pair with our desire for a cold beer, since the temps here have started to rise in the last few days. Flipping through one of the cookbooks I brought along, I saw an easy recipe for quesadillas – protein and veggies wrapped in a little carb blanket to create a great recovery food, we were sold! We already had roast chicken, veggies and cheese in the fridge. All we needed to pick up was a few more tortillas and some black beans. | Quesadillas

We didn’t use any oil or cooking spray on the tortillas, just a non-stick pan. Also, just enough cheese to almost bind everything together. Topped with homemade salsa and guac, and served with cool cerveza, it was a quick meal that hit the spot and satisfied a post-climbing craving! | Quesadillas

This was a really great one-pan meal that was quick to make and east to clean up. Perfect RV food, and a perfect start in to a relaxed evening!

Healthy Quesadillas with Salsa and Guacamole

For the filling:
  • Slices of roasted chicken
  • ¼ small red cabbage, thinly sliced
  • 1 red pepper, thinly sliced
  • Handful spinach leaves
  • 8 slices Queso Fresco cheese, thinly sliced
  • ½ can black beans, drained and rinsed
  • 4 whole wheat tortillas
For the Salsa:
  • 2 Roma tomatoes, diced
  • ¼ small red onion, thinly diced
  • 1 Serrano pepper, thinly diced
  • Handful fresh parsley, chopped
  • ½ lime, juiced
  • Salt and pepper to taste
For the Guac:
  • 1 avocado
  • ¼ small red onion, thinly diced
  • ½ lime, juiced
  • Salt to taste
For the salsa:
  1. Mix all ingredients together and let sit while you prep the quesadillas.
For the guacamole:
  1. Mix all ingredients together and let sit while you prep the quesadillas.
For the quesadillas:
  1. Heat a non-stick pan over medium heat.
  2. Place a tortilla in the pan and add cheese onto one-half.
  3. Place the toppings onto the cheese and fold the tortilla in half. Wait a few minutes until the cheese has melted and the tortilla browns.
  4. Flip the tortilla and brown the other side.
  5. Serve warm with a nice cold cerveza.
